Rocket / Roquette / Arugula from Northshire Farm
As much as I love root vegetables, I am looking forward to all the new and delicious produce coming into the farmers markets. This bunch of arugula, also known as Rocket or roquette, or Eruca sativa (thanks, Wikipedia), is such a welcome site from Northshire Farm in West Winfield, New York. The tender leaves and crunchy stems make a wonderful salad with a slightly peppery kick. Try it as a bed of salad for a fresh crab cake.
One of the things I like to do with arugula is add several leaves to a cup of mayonnaise and run it through a food processor. I’ll make a turkey and cheddar sandwich on a crunchy rustic bread with the arugula mayo. It tastes fresh and tangy on the sandwich, and you can keep the mixture in the fridge for at least a week. Northshire Farm will have their greens, fresh eggs, raw honey and more the Union Square Greenmarket on Saturday.
This weekend is an exciting one in the markets, despite the crazy late spring weather (also known as “normal late spring weather”).
